These beans come from the Eva Gotiti processing station, located in the village of Gotiti (Gotiti Kebele), in the Gedeb region in southern Ethiopia. The station was founded in 2022 on a two-hectare plot of land with the aim of supporting local smallholders and providing them with high-quality, professional coffee cherry processing. Each year, the station processes the harvest of approximately 868 farmers who grow coffee in small gardens at an altitude of 2,000–2,100 meters. Eva Gotiti also emphasizes not only supporting the community through fair pricing, but also sustainability and careful water management. In the future, Eva Gotiti plans to expand with solar tunnels, artificial dryers, and its own groundwater source.
It has a light acidity, fresh taste, and light body thanks to the washed processing method. With this method, the coffee cherries are placed in water tanks after harvesting, where they are left to ferment for several hours. Once fermentation is complete, the beans are washed and dried in the sun, most often on raised African beds. Coffee processed in this way is light and clean in taste, with pleasant citrus and fruit notes.
