We’re thrilled to release another Ethiopian coffee by “The King of Guji” Ture Waji!
This lot has undergone an initial fermentation in plastic barrels for 48 hours and is then dried as a typical raised bed natural for 15 – 20 days.
Expect notes of blueberry, strawberry, and gummy bears with a juicy mouthfeel!
Sookoo Coffee: Ture Waji’s Guji Legacy from Shoondhisa
Sookoo Coffee, founded by Ture Waji and his brother Assefa in 2018, has become a key player in Guji’s renowned coffee scene. Located in Odo Shakiso within the Oromia region, Sookoo Coffee is built on a commitment to quality and community. Their beans are sourced from surrounding Kebeles, each lot reflecting the unique terroir of its origin.
This particular lot comes from the Shoondhisa Kebele and features varietals Gibirinna 74110 and Serto 74112, both selected for their resistance to coffee berry disease by the Jimma Agricultural Research Center in 1974. These cherries are naturally dried on raised beds, preserving the rich flavors Guji is known for.
