Jardines Del Eden is the name of a project by Cofinet, a coffee company located in Quindío, central-western Colombia, which means "Garden of Eden". The altitude is the highest in the region, reaching 2000m. This farm not only plants Castillo, but also various varieties including Geisha, Java, and SL28.

[What is Infused Fermentation Honey?] For this batch, strawberries and wine yeast are added to the coffee cherries for the primary fermentation, and the anaerobic fermentation is carried out for 72 hours, followed by pulping. The honey with the remaining mucilage undergoes secondary fermentation in an African bed drying environment of 35 degrees or less until it reaches the ideal moisture content.
