[Ethiopia Sky Project Tomodachi, 74158 - Double Anaerobic Honey]

The altitude is an intimidating 2,450m! From Ethiopia's popular Sky Project! Enjoy the juicy stone fruit nuances to your heart's content with this double anaerobic honey process! When warm, it has the juicy stone fruit nuances of yellow peach, as well as tropical fruit flavors like dragon fruit and a hint of papaya! The milky texture and fruit flavor combine to make it just like fruit milk! As the temperature drops, you can enjoy the berry flavor of strawberry and the tea-like flavor of red tea. A special Ethiopia created by Tamir Tadesse! [What is Sky Project?] You've probably heard of the 2050 problem somewhere. It is said that due to global warming and climate change, it will become difficult to grow coffee in most places where coffee is currently produced, and in this modern age where varieties are being improved and cultivation locations are being changed little by little, the Sky Project was started in Ethiopia with the goal of "growing coffee that is more delicious and more sustainable." Coffee cultivation in Ethiopia is mainly carried out at around 2000 meters, but it is grown at an altitude of about 500 meters higher, and it takes a long time for the coffee cherries to mature. This results in coffee with a sweeter and more complex flavor. Currently, the Sky Project is being led by Tamir Tadesse, the winner of the 2021 COE, and the coffee is grown at Aro Coffee, which he owns.

[About Tamir Tadesse]

Tamir Tadesse is a producer of Aro Coffee, located in Bensa Woreda Aro Village. Underscreen and Mulago, which were previously handled by Acid, are also coffees made by him! Tamir is a super talented producer who won first place in the Anaerobic Natural and fifth place in the Natural at the Cup of Excellence 2021. He is known for not only submitting coffee to competitions, but also for putting effort into ordering custom lots used in barista championships, and the coffee he makes has changed the lives of many baristas. [What is 74158?] At first glance, it looks like a string of numbers and is difficult to understand, but this is the variety number of an Ethiopian native variety. In Ethiopia in the 1960s, a disease that affects coffee trees called coffee berry disease was prevalent in Ethiopia at that time. So the Ethiopians established a research institute called Jimma Agricultural Research Center (JARC) and began developing hybrid varieties with high disease resistance. After more than a decade of research, these varieties with the numbers 74〇〇〇 were born. They were developed in 1974, so the numbers start with 74. Even so, they count them as native varieties even though they are hybrid varieties that have been researched and developed. It's strange.

This anaerobic honey has a juicy fruity flavor that comes from the process created by the famous Tamir Tadesse! As you can tell from the lot name, this is a special lot made for Japan! If you like Ethiopia, be sure to give it a try!
